Bürgerspital Winery | Wine Tasting & Events

Located in the heart of Würzburg's old town is one of the most traditional addresses in German viticulture: Bürgerspital Winery. As part of the Bürgerspital zum Heiligen Geist Foundation, it has been combining top-quality wine production with social commitment for over 700 years. The VDP winery manages 120 hectares of famous vineyards such as Würzburger Stein, Stein-Berg, and the monopole vineyard Stein-Harfe. Here, characterful Silvaners, Rieslings, and Pinots are produced, with the finest white wines still being bottled in the traditional Franconian Bocksbeutel. Visitors can experience professional advice in the wine house under the carillon, enjoy the summer courtyard of the wine taverns, and dive into the legendary cellars during guided tours, where the legendary 1540 Steinwein also rests. Thanks to its central location, good public transport connections, and parking facilities at the theater, getting there is uncomplicated – ideal for connoisseurs, groups, and event organizers for up to 600 people.

Wine Tasting and Cellar Tour at Bürgerspital Winery

Those who want to understand the wines of Bürgerspital should start with a wine tasting. The starting point for this is the wine house under the carillon at the corner of Theater-/Semmelstraße. Here, wine sales, a vinotheque with expert advice, and light snacks are available; in the wine garden, one can enjoy a glass on pleasant days. Opening hours allow visits seven days a week, and tickets for public tours can be purchased on-site or online. Regular cellar tours take place year-round on Saturdays at 4:00 PM, with additional tours from April to October at 2:30 PM. The tour starts in the wine house and leads through the pressing hall down stone steps into the vaults. In the historic wooden barrel cellar, visitors encounter large, long-aged Franconian wines and learn how the characteristic minerality from the shell limestone is imparted to the wines. In the modern area, the team showcases the stainless steel tanks where fresh, clear varietal profiles are created before the best batches mature in wood. The highlight is the treasure chamber – here stands the last unopened bottle of the 1540 Steinwein, a monument of viticulture, about which British wine writer Hugh Johnson wrote in 1961 after tasting the penultimate bottle. Groups can book individual tastings, from beginner packages to vineyard-specific tastings focusing on Würzburger Stein, Stein-Berg, and Stein-Harfe. For companies or private celebrations, culinary wine tastings can be combined with the wine taverns, turning the tasting into a rounded evening. Conveniently, the meeting point for the tours is centrally located, the paths are short, and thanks to the proximity to the Mainfranken Theater, arriving without a car is also comfortable.

Silvaner, Riesling, Bacchus & Scheurebe: Wine Styles and Vintages

Silvaner and Riesling shape the profile of Bürgerspital. As early as 1665, Silvaner vines were planted in Würzburger Stein – this grape variety is still considered a specific icon of Franconia. On the 120 hectares of vineyards, the classics grow on shell limestone, whose chalky, salty imprint is perceptible in the wines' aroma and palate: Silvaner appears here powerful, spicy, and with a fine herbal scent, while Riesling is straightforward, citrusy, and precise with cool minerality. Bacchus adds floral, exotic aromas to the Franconian diversity, while Scheurebe – named after Georg Scheu – oscillates aromatically between blackcurrant and citrus. The Pinot family (White and Grey Pinot, Pinot Noir) brings creamy, nutty, and red fruit facets to the selection. The range of locations extends from the world-famous steep slope Würzburger Stein to Stein-Berg and Stein-Harfe (monopole vineyard) to Innere Leiste, Abtsleite, and Pfaffenberg. Beyond the city limits, the winery manages areas in the Main Triangle and Steigerwald as well as in Randersacker (Teufelskeller, Marsberg, Pfülben). In the cellar, the team relies on a combination of stainless steel (clear primary fruit, tension-filled acidity) and classic wooden barrel aging for structure and length. The best white wines have been bottled in the Bocksbeutel for almost 300 years – a quality promise closely associated with Würzburg. Current vintages show a trend towards drinkable, precise wines with moderate alcohol and a distinct signature of origin. Those wishing to taste varietally can start with estate wines in the Schlegel bottle and work their way up through village wines to VDP.ERSTE LAGE and VDP.GROSSE LAGE. Tip: The combination of Silvaner from Würzburger Stein and Franconian cuisine in the wine taverns – from Schäufele to vegetarian chanterelle dishes – perfectly brings terroir and table together. For lovers of aromatic wines, Bacchus and Scheurebe shine, which as off-dry variants particularly complement Asian or vegetarian cuisine.

Events in the Courtyard and Wine Taverns: Wine Festival, Tastings, Culinary Experiences

Bürgerspital is not only a winery but also a charming event venue. The centerpiece in the warm season is the baroque courtyard on Theaterstraße: under fairy lights and between historic facades, evenings are created that are memorable. The Bürgerspital wine taverns – one of Würzburg's most popular restaurants – serve regional cuisine with a modern touch, tailored to the wines. Throughout the year, the winery offers recurring formats: public cellar tours, thematic wine seminars, culinary wine evenings, and seasonal specials such as the Winter Magic in Advent. A special highlight is the wine festival or WEIN.PARTY at Pfaffenberg: on two summer evenings, the courtyard in Dürrbachau transforms into an open-air venue with wine bars, live music, cocktails, food, and plenty of space for dancing and sitting. Admission is usually free, the atmosphere is relaxed, and the audience is mixed – as long as they love wine. Those wishing to celebrate privately or professionally benefit from flexible room options: from dining rooms for small family celebrations to larger events, and for extraordinary occasions, events for up to 600 people are possible. Thanks to the combination of winery, kitchen, and professional service, every event receives an authentic signature. Culinary pairings are ensured through menu coordination with suitable wines – from fresh Riesling sparkling wine as an aperitif to Silvaner from Erste-Lage parcels to elegant Pinot. There are also plenty of photo opportunities: the romantic courtyard, historic stairs and cellars, Bocksbeutel displays – an ideal setting for memorable photos from guest groups to business events.

Directions, Addresses & Parking: Theaterstraße, Wine House, Pfaffenberg Courtyard

Orientation is easy when you know the three central addresses. First: Bürgerspital Winery, Theaterstraße 19, 97070 Würzburg – here are the management, sales for trade & gastronomy, and parking spaces available for appointments in the courtyard. Second: the wine house under the carillon at the corner of Theater-/Semmelstraße – meeting point for cellar tours, vinotheque, wine sales, and wine garden; there is a short-term parking zone for loading here. Third: the courtyard at Pfaffenberg on Pfaffenbergstraße 11, 97080 Würzburg-Dürrbachau – the WEIN.PARTY takes place here in summer; many seating options, some covered, and a shuttle service from near the main train station makes visiting easier. For arriving in the old town, the parking garage at the theater on Rüdigerstraße is recommended, just a few minutes' walk from the winery and the wine taverns. The parking garage is open continuously, has an elevator, disabled parking spaces, and an E-charging station; rates are time-dependent. Those arriving by public transport can get off at stops in the immediate vicinity of the Mainfranken Theater; from there, it’s just a short walk to Theaterstraße. For wine pickups on delivery slips, the winery & shipping in Ludwigstraße is used (access to the pressing hall). The central location in the old town ensemble makes visits easy to plan – whether for a spontaneous wine tasting in the wine house, a booked tour, or a culinary evening in the courtyard.

Sparking Wine Specialties: Silvaner brut, Riesling brut, and Pinot Cuvée

In addition to still wines, Bürgerspital has developed strong expertise in sparkling wines. The Riesling Sekt brut shows fine minerality and delicate fruit, classically fermented in the bottle and hand-riddled – an elegant aperitif that pairs well with finger food as well as festive receptions. The Silvaner Sekt brut transports Franconian identity in a sparkling way: robust structure, herbal spice, and cool limestone notes merge into an invigorating style that is convincing both on its own and with canapés. The range is completed by the Pinot Cuvée (Brut) made from Pinot varieties, whose long yeast aging imparts elegant brioche notes, creaminess, and substance – ideal with seafood, light poultry, or as a companion throughout an evening. Those wishing to understand sparkling wine in the context of the vineyards should plan a tasting that starts with a glass of Riesling Sekt and progresses through Silvaner from Würzburger Stein to a matured Erste-Lage selection. Conveniently, the vinotheque offers expert recommendations on drinking temperatures, food pairings, and vintage differences; many sparkling wines are available in various bottle sizes. For gifts and events, Bocksbeutel gift boxes and combined cartons are available, allowing for the creation of individual sets for customers, employees, or wedding parties. And because the winery is part of a social foundation, every purchase also supports the foundation's purpose – an added value that goes beyond the moment in the glass.

History, Würzburger Stein, and the 1540 Steinwein

Bürgerspital is inextricably linked to the city's history. In 1316, the Würzburg patrician Johannes von Steren, together with his wife Mergardis, donated his fortune to care for the sick, poor, and needy – the origin of the still-active Bürgerspital zum Heiligen Geist Foundation. As early as 1334, the first vineyards were added to finance the foundation and support its residents; in the 16th century, the institution received its current name. Over the centuries, the winery grew while preserving its identity as part of a community-oriented institution. Today, Bürgerspital is one of the significant VDP wineries in Germany. The Würzburger Stein location is particularly famous – a shell-shaped steep slope overlooking the city, where Silvaner was planted as early as 1665. The Steinwein was bottled in Bocksbeutel by princely decree in 1726; the bulbous bottle shape remains a trademark of Franconian top wines to this day. In the cellars of Bürgerspital lies the last unopened bottle of the 1540 vintage – often referred to as the oldest white wine in the world. A tasting round in London reported on the penultimate bottle in 1961: Madeira-like in color, still lively on the tongue before the wine oxidized shortly after exposure to air. These stories are more than anecdotes – they explain why origin, craftsmanship, and patience are so highly valued at Bürgerspital. The winery combines tradition with precision: modern stainless steel tanks for clarity, wood for structure, selective harvesting in slope and steep locations with inclines of up to 60 percent, shell limestone as a hallmark of origin. Awards in renowned wine guides – such as 4 grapes in Gault&Millau 2025 and high ratings in several guides – confirm this line. Those seeking the connection between city, culture, and wine will find a vibrant monument at Bürgerspital: vaulted cellars of natural stone, a baroque courtyard, Bocksbeutel on the shelf – and in the glass, wines that make Würzburg tasteable.

We had a wonderful evening in this dreamy courtyard. The atmospheric lighting, cozy ambiance, and attentive, friendly service made the visit perfect. The food was a real highlight: beautifully presented, high quality, and delicious. We especially recommend the beef duo with ox cheeks and filet – a delight! The chanterelle dishes are also excellent and show that both meat lovers and vegetarians will be fully satisfied. Whether for a private dinner or a business meal – this restaurant is absolutely recommended for any occasion! 🌟

The wine, although from a top vineyard, was of inferior quality. We waited forever for our main course. For the pork crackling as a starter, we got one more slice of bread upon request. There are too few waiters (or is the kitchen too small?) for the number of guests. The food and drinks are mediocre in comparison. Update: The waiter was very accommodating throughout the evening and tried to salvage the disappointing night. He offered us a shot and a dessert on the house. For that, an extra star for the stressed but nice waiter.

Really good food, no question about it! Flavor-wise, the Schäufele was so tender it almost fell off the bone by itself. Still, at nearly €30 with two dumplings, one wonders: Will there be a bonus dumpling next time? The same goes for the burger – excellently prepared, but over €22 without a side feels like a movie without popcorn: You want it, but you're not sure if you should. 😉 The service was a bit... creative. As soon as you enter the restaurant, a barrier is set up – without a "Hello," more like a "Stop, not everyone gets in here!" After that, though, they were quite friendly and eager. Conclusion: Good taste, good value for money, service with potential for improvement. Overall worth a visit – with a slightly raised eyebrow. 👍

Culinary wine tasting with a wine cellar tour: Wine cellar tour with a sparkling wine reception. Then 4 courses with matching wines. Delicious food and good wine selection. Overall very informative, not boring and not dry. Portion sizes could have been a bit larger.
